Recipe of the Week: Sofrito (1/31/13)



Recipe of the Week: Sofrito
Sofrito is a versatile, aromatic puree of tomatoes, peppers, cilantro, onions, and garlic. It's the foundation of many Spanish influenced dishes. There are many variations of this recipe. This one uses ingredients that are easy to find in any grocery store for those who do not live near a Caribbean or West Indian grocer. I find using Sofrito that I tend to use it in a lot of things from making rice extra yummy, to adding it to eggs. It is super easy to make and a perfect pairing to a lot of dishes.
Store sofrito in a glass container in the refrigerator for immediate use or freeze sofrito in 1/4 to 1/2 cup portions for use at any time.

Prep Time: 15 minutes Yields: 1 quart


Ingredients:

  • 2 medium green peppers, seeds removed
  • 1 red sweet pepper, seeds removed
  • 2 large tomatoes
  • 2 medium onions, peeled
  • 1 head of garlic, peeled
  • 1 bunch cilantro leaves
  • 1/2 bunch parsley leaves

Preparation:

1. Chop and blend all the ingredients in a food processor or blender.
2. Store in glass container in the fridge or freezer for use any time to add a flare to your food.

Hospital

I apologize for the lack of posts this month. I had a very bad viral lung infection, that has left me hospitalized twice within this month. I just got home from the hospital last night. I spent a week in the hospital. I am well now, and will resume normal posting again.  I would also like to thank all of you who emailed me wondering if I was OK while I was gone. It warms my heart that you all care and worry about me.

Later today I will be posting our recipe of the week. I know how much everyone looks forward to easy to make delish recipes. Now as my blog fans know you can leave comments here or email me anytime with suggestions, questions or anything in between. I always look forward to hearing from you all. I'm starting a new project now that I'm back home and in better health. As you know I had been working on a clutch purse. Well I need a stylish yet suitable handle. Instead of buying one from the craft store I have decided to make my own. I will be using some adorable zig zag ribbon that is rather stiff in terms of ribbon. I will be hand beading black and white seed beads onto it. Once I get it started I will take some pics for you to see. Then when all done I can finally showcase the clutch.

Soda Bottle Stencil

I came across a wonderful idea today that I just had to share with you all. This is a super easy to do/use stencil. All you need is an empty soda bottle and you have an instant flower stencil.

I used acrylic paint, as it seems to work the best. Simply take the bottom of the empty soda bottle and dip the bottom in the acrylic paint. The stencil makes a perfect flower shape. This works best on canvas, but can be used on almost any suitable surface for painting. Best of all, this is a green way of being frugal. You get to recycle and save money all at the same time. You can also reuse this stencil over and over again. Another great idea if you want to keep it for reuse is to cut the bottom piece off to make it easier to store.

Blog Revamp

OK guys, so I bet you have noticed some new changes around here. I decided the blog needed a makeover. I revamped it all... but of course kept a a slight feel of the old within the blog walls so to speak. I didn't want it to be so drastic nobody would recognize it anymore. I hope you all like it.

Not that I haven't been working hard all along, but I need to tell you all that our little blog here needs to explode out of its shell and burst into the world a star. I will be working very hard here to make everyone happy, while posting my little heart out. This blog means a lot to me, and I hope you all enjoy it as much as I do.

Spread the word... I want us to grow and grow and grow. I want to reach as many people as I can and spread the blog everywhere!

Yummy Healthy Egg Breakfast







I was browsing facebook, and I get tons of great ideas by doing this, thanks to all the great people I am subscribed to. I came a across a great tutorial I had to share with all of you!

First cut bell peppers into slices, leave the pieces round. Not to thick, but not to thin. Crack an egg, and pour HALF into the middle. Add a thin slice of tomato onto in he middle on top of the egg, then pour the rest of the egg on top. Sprinkle with some freshly ground pepper. I also add a dash of adobo on top. Cook till egg is done to your liking. Serve with toast or biscuits  Very very yummy! I loved it. It is becoming a staple at my breakfast table. The whole family adores it. I hope you will to.

Florida To Pittsbugh

Well my bloggy friends, I apologize for being gone for a few days. My parents just moved in with me so I can help take care of them. It has been a hectic week. They drove from Tampa Florida to Pittsburgh Pa in a uhaul with 2 cats, 2 dogs and a parrot. It took them 4 days. It should have only took them one to one and a half days. They had some minor set backs but are now finally here and all settled in.

So now that everything is back to normal, I will be back to posting more normal. Later today I will be posting another recipe. I will be posting quite a few recipes in the next week or so. I believe the holiday season is the best time of the year to cook/bake all sorts of holiday goodies and treats. I have to share my faves with all of you. If you have any ideas or requests feel free to comment or email me. I get a lot of emails from all of  you, and it always brightens my day.

I will also be doing a give away soon, so I hope you guys get excited for that and stay tuned to further blog posts.

Needlepoint Clutch Bag Project

Hi guys... a lil while ago I posted that I stated a new project. It was a Needlepoint Clutch Bag. I bought a few of the plastic canvas clutch's to work with. I plan to sell them on my Etsy store: Freak Unique Designs. I am over half way done.

This is what I bought. They work wonderful and are easy to work with. As plastic canvas goes, these were very cheap to buy off Amazon. Check them out:

When I am done, It will have a polymer Clay designed Large Button Clasp. I am also thinking of doing some hand beading on the front around the white square. What do you think? I will post  the finished project when I am done. It will also be in my Etsy store for sale. I highly recommend buying your own to work with. The needlepoint design can be simple like mine or very complex. The project design can be up to you, but the possibilities are endless...and the clutch will be stunning when done. It is super easy and fun to work with!

It def works really well and I had to share with all of you! An extra step I took was to use a clear coat base as my first step, then after the the color you choose as the tip, follow up with a second clear coat to seal the color and make it glossy.  Enjoy!

First Snow Of The Season

I awoke to the first snow of the Season. I love snow. I am from Florida, and moved up to Pittsburgh a few years ago. The changing of the Seasons, and snow still have a magic wonder to me.  I decided when I let my dogs out today I would snap a few shots to show you the very first snow of the season. It was very light snow, and its still coming down in tiny trickles...but it is the very first snow of the Season in Pittsburgh!

New Project:Shoulder Bag

Recently Purchased The Darice Spring Tension Hoop as shown below to work on some intricate bead work I'm doing on some flowers, on my current project. I'm making a cute shoulder bag, and doing the bead work without the hoop would have been almost impossible. I got a really great deal, as show below... and it just arrived today. I love it. Its small and the tension is perfect for what I am working with. Its super easy to use, as I have never needed to use one until now... but I thought it would be tricky! Guess again... super duper easy. A great purchase that will aide me in many craft projects I'm sure.



Here is the fabric I'm working with (with hoop already on) as I'm beading the stems of all the flowers with green seed beads, before I begin sewing the bag. Right here is just raw material with a few beads sewn already. Wish me luck. I'm in love with the Fabric. I found it by an ad on Craigslist. I got a huge, I mean HUGE garbage bag of all sorts of fabric all for FREE. Gotta love FREE guys! I sure do. (Sorry its a little blurry folks, I think I need a new camera very soon.)





Ill post more pics when I'm done with the projects. Perhaps a tutorial if I have some free time to do so in between.

Does Anyone Ever....

Does anyone ever have so many projects to work on, games to play, things to read, etc... and still bored and don't know what to do? I have so many things to do, but I'm still bored. I have like a million craft projects to either start, work on or finish and still don't know which to work on or do. Same with games. I'm a huge gamer, esp PC gaming. I play WOW, SecondLife, Rift, Perfect World, Rusty Hearts, etc... but when I'm bored I don't know which one to play.

My mainstay is always Monopoly on Pogo. I pay for premium membership just so I can play Monopoly without ads. I play it on average 10 times a day on and off. I hate waiting in the game room to find a game though.

Do you guys have the same problem?

I'm sitting here writing this blog out of sheer boredom.   I started dinner and its finished on simmer till my hubby dearest comes home from work. I was staring at my computer screen not knowing what to do next. Its so weird... I have so much to do yet cant decide what to do.

Any suggestions?

New Project

Hi guys, Im just having a really good week.
I started a new project... Its needlepoint clutch purse. It will also have some hand beading done on it. Its all custom and I think it will be very cute when I'm finished with it. I'm making it for sale on ETSY, however I love it so much it will be tempting to keep it for myself. Its all red, with white accents, and a red and white star. I have not chosen what will accent the front snap buttons yet... but it has to be really cute. Any ideas?
